A sandwich wedge has one job beyond holding the sandwich, which is to make it look worth buying. The window size and the angle of the cut do most of that, so the standard wedge suits a classic round loaf while a deep wedge takes a thicker filling without squashing it.
Front-loading wedges are quicker to fill on a busy prep bench and hold the sandwich at a better angle in a chiller. Tuck-top packs seal more securely for delivery. Bloomer boxes handle taller artisan loaves that will not fit a standard wedge at all.
Window material is the other choice. PLA and cellulose windows are compostable, PET windows are recyclable, and the board behind them is kraft either way. Standard wedges are 65mm, deep wedges 75mm, and the bloomer box takes a 70 by 125mm loaf. Everything here comes in packs of 500.
