Callebaut Cocoa Butter is made by pressing carefully selected, whole roasted cocoa beans to produce a 100% pure, neutral-tasting ingredient with no added flavour or colour.
Its smooth, colourless profile makes it an ideal base for mixing with fat-soluble colours, especially for spray gun applications in decorative work.
Cocoa butter is also a valuable tool for adjusting the viscosity of chocolate. Adding between 1% and 8% can significantly improve fluidity, making it perfect for thin moulding, delicate enrobing, and achieving a finer finish. It also boosts the gloss and snap in moulded or coated confections, enhancing both appearance and texture.
